An oriental marinade offers a delightful mix of sour, sweet, salty, and spicy. Soak the prawns for half an hour in the fridge, then fry them in just a few minutes. A glossy, thick sauce clings to the prawns, bringing all the flavors into every bite.

Ingredients

400 g peeled large prawns
2 tbsp olive oil
60 ml soy sauce
60 ml ketchup
1 tbsp honey or brown sugar

3 finely chopped cloves of garlic
1 tsp ginger powder or some freshly chopped ginger
cornstarch
2 spring onions
2 tsp sesame seeds
½ finely chopped red pepper (seeds removed)

Method

  1. In a large bowl, mix 1 tablespoon of olive oil with the soy sauce, ketchup, garlic (powder), honey or brown sugar, vinegar and some freshly chopped ginger or ginger powder. Add the prawns, ensuring they are well and evenly coated. Cover and refrigerate for at least 30 minutes.

  2. Use a sieve to remove the prawns from the marinade, reserving the marinade. Heat a large frying pan with 1 tablespoon of olive oil and cook the prawns for 2 to 3 minutes over medium heat until they turn pink.

  3. Add the marinade to the frying pan and let it simmer for a few minutes until it thickens. If needed, thicken the sauce with a little cornstarch. Garnish with chopped spring onions, some sesame seeds, and chopped red pepper.
