Sandwich Brie

Chill out for lunch

Broodje warme brie, sinaasappel-honingsaus, basilicum. Perfecte zomerse picknick in de duinen. Of gewoon doordeweeks thuis, als lunch. Blauwe hemel, lentezon, balkon, beetje dommelen. Zacht, zoet, zuur, romig, umami, krokant. Ideaal bij een licht blond bier als Grutte Pier Blond van de gelijknamige Friese brouwer. Rode besjes, als zuurtjes tussendoor. Stil genieten, alleen of samen. Perfecte start van de middag.

Brie met sinaasappelsaus Brie with orange sauce

Ingredients

200 g Brie
2 slices fresh bread
2 oranges
1 tbsp honey
a few sprigs of thyme
knob of butter
fresh basil
handful of redcurrants

Method

  1. Squeeze the oranges for 100 ml of fresh orange juice. Gently reduce the juice with 1 tablespoon of honey and some fresh thyme sprigs at a low temperature. Season with salt and pepper. Thicken with a knob of butter or some binding agent.

  2. Cut the brie into slices ½ cm thick and 3 cm long. Put them under the grill for 1 minute or in the oven at 180C for 1 to 2 minutes until the brie is warm and slightly melted (stay with it as it can go quickly).

  3. Top the bread slices with the lightly melted brie, the orange-honey sauce, some basil leaves and the redcurrants.
